Tonight we made my version of Honey Crackles. Its pretty much the standard recipe that you find on the cornflakes box with a little twist. Tonight we baked them in patty pans (makes about 24), but as an alternative, you can bake it as a slab, making sure you press into a lined pan quite firmly. You will need to cook it a bit longer. While its still warm cut into bars (but leave it in the tin). When cold, remove form the tin and recut. Homemade Crunchy Nut Bars! 

4 cups Cornflakes
1/2 cup crushed nuts
100g Butter
1/2 cup Caster Sugar
2 Tblspn Honey

Place butter, sugar and honey in a saucepan. Heat slowly until the sugar dissolves then increase the heat until the mixture boils and becomes frothy.
Mix the  nuts and the cornflakes together. Pour 1/3 of the cornflakes / nuts into the saucepan and mix well. Pour all this back into the bowl with the rest of the cornflakes and mix well.
Place into patty pans that have been placed in a muffin pan. Pack the mixture in well. Bake at 150C for 10 minutes. Allow to cool in the pan. Try to eat just one!

Well, we’re off today. I’m pretty much all packed in our new Bobsy Twins Luggage. I’m usually throwing things in a suitcase at the last minute, so it’s quite strange to be packed 24 hours in advance.
We are heading overseas for our 20th wedding anniversary and leaving the kidlets with my sister in Melbourne for the week. (Lucky her! :razz: )
There will be lots of photos on Flickr for you all to perve at while we’re away, and we might even be able to fit in a bit of geocaching!

… I have mentioned C6 far too much and not mentioned H9 any where near enough. I told her that it was because sitting in her room playing on the computer wasn’t really newsworthy enough. Well APPARENTLY  :roll:  she doesn’t spend ALL her time on the computer. My bad.

On Saturday she played netball. She played quite well actually. She spent the day playing Wing Defence, which is a bit unusual for her, because 1) she doesn’t like defending and 2) she hates running. Given a choice, she prefers to play goal shooter, which fulfils all her necessary criteria. Anyhow, she played defence like and attacker and managed to stop the opposing team from getting the ball down their goal end too many times.  

I suppose I should have mentioned it earlier, but I can’t be expected to remember everything. Hope that even the scales a bit. :wink:
